tp it's a bit disappointing the red color didn't turn out like what i expected .
based on research an,cewah! the origins of the red colour is actually came from pigments found in cocoa powder. these pigments r called "anthocyanins", n actually will change depending on the pH value yaw! im surprised too. In acidic conditions, anthocyanins are red in colour so by ensuring that the pH of cake stays below 7 it will definitely be red ! *fact!
but but but kan, a lot of cocoa available nowdays has been neutralized. (naturally it's acidic) thus the bright red color of the cakes dat u c in stores is actually from the unnatural color pigment one and only yaw~ *chemical2
take note u are actually eating cake cicah with red water color or soluble id's pastel or crayons :p .
